Ingredients

3 C. flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1/2 tsp. nutmeg
1 egg, beaten
1/2 C. sugar
1/2 C. brown sugar
2 C. shredded carrots
2 mashed bananas (quite ripe is best)
1/2 C. unsweetened applesauce
2 T. vegetable oil
1 T. ground flax seed
3 T. water
1 C. raisins
Tips
Use whole wheat flour for an added health bonus! My little 1 year old loves these muffins. This recipe also works perfectly when zucchini is substituted for carrots.
Directions
Combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Set aside. Combine egg, sugar, brown sugar, carrots, bananas, applesauce, and oil. Mix flax seed and water in a small bowl and let stand for two minutes. Add to egg mixture. Make a well in the center of dry ingredients. Add egg mixture all at once to dry ingredients. Mix just until combined. Stir in raisins. Fill standard size muffin cups (either sprayed with cooking spray or with a cupcake liner) 2/3 full and bake at 350 for approximately 30 minutes or until toothpick comes out clean.
