Quick way to roast chicken and vegetables Quick way to roast chicken and vegetables
Number of Servings: 1


    Chicken pieces (I usually use thighs and breasts)
    Any vegetables you like, that are good roasted
    salt to taste
    pepper to taste
    thyme or other herb
    olive oil


Preheat oven to 425. Layer vegetables and drizzle with olive oil. Sprinkle herbs, salt, and pepper over vegetables. Layer chicken over vegetables. Roast for 35 to 45 minutes, stirring occasionally.
