Introduction

Ingredients

    1 2/3 cups lukewarm water (divided)
    1 tablespoon active dry yeast
    2 cups whole wheat flour
    1 cup buckwheat flour
    3 large eggs separated + 1 egg white
    1/4 cup sugar
    1 1/2 cup skim milk
    1/2 cup unsweetened applesauce
    4 tablespoons unsalted butter
    1 tablespoon vanilla extract
    1 tablespoon cinnamon (optional)


Tips

I cool these on cooling racks or on cool oven racks. Then i stack and freeze them in freezer bags. These warm and recrisp quickly under the broiler.


Directions

Dissolve the yeast in 2/3 cup of warm water with a pinch of the sugar. Let it stand 5 to 10 minutes, until the mixture begins to foam. Meanwhile combine flours and salt in large bowl. Separate eggs and begin whipping whites until stiff peaks form. Add remaining sugar and egg yolks to yeast mixture stir to blend. Pour yeast mixture and remaining water, milk, melted butter, applesauce and vanilla into flour and beat until smooth. Fold the egg whites into the batter, let the batter stand for one hour stirring every 15 minutes. Cook according to waffle maker instructions. These need to cook a slightly longer to develope the crispy texture.

Serving Size: makes 10-11 large waffles
