Ingredients

1/4 cup chopped onions
2 Tbsp butter spread
8 large eggs, beaten
1/4 cup milk
1 Tbsp pesto
dash of sea salt
dash of nutmeg
2 Tbsp chopped black olives
4 slices deli ham, chopped
1/2 Tbsp minced garlic
2 tsp dijon mustard
1 cup shredded cheddar
1 head of broccoli florets, roughly chopped
Tips
Served originally with sweet potato fries on the side for dinner. Add regular potatoes in pan for a one-dish breakfast or brunch.
Directions
In oven safe pan, sautee onions, garlic and ham in butter spread. Once browned, add broccoli and cover. Cook just a few minutes until bright green; remove immediately from heat so broccoli does not over cook (broccoli will finish cooking in oven).
Beat eggs with pesto, salt, olives, milk and mustard. Pour over broccoli mixture. Sprinkle with cheddar. Bake at 375 for 25 minutes or until middle is set.
