Ingredients

    1/4 c Flax Seed, ground
    1 tsp Baking Powder
    2 tsp Cinnamon, ground
    1 tsp Coconut Oil
    1 Egg, fresh, extra large
    1 Stevia 1pkt.

Tips

I have exchanged the cinnamon for unsweetened dark cocoa powder. My mother likes to add vanilla extract.

This recipe does come out on the dry side, but I like it that way. It goes great with my afternoon tea or coffee.


Directions

Mix all ingredients into a coffee mug and microwave for 1 minute. Pop the muffin out of the mug & enjoy.
