    1 whole egg
    2 egg whites
    Onion, chopped (about 1/4 cup)
    2 slices canadian bacon (diced)
    1 cup raw spinach
    1/4 cup 2% shredded cheddar cheese
    1/2 Tbsp canola oil

    Beat egg mixture. Saute onion in canola oil, add canadian bacon. When cooked add spinach, cook until wilted, add eggs, cook until almost done (scrambling while cooking) add cheese and serve.
