Ingredients
-
• 3 cups rolled oats
• ¾ cup sliced almonds
• ¼ cup wheat berries
• ½ cup sunflower seeds
• ½ cup sesame seeds
• ¼ cup pepita seeds
• 2 tbsp flax seeds
• 1 cup shredded coconut
• 1 cup favorite dried chopped fruit (optional)
• 1 tsp cinnamon
• 1/2 tsp salt
• 1/3 cup coconut oil
• 1/3 cup good honey
• 1/3 cup agave syrup
• 1/3 cup apple juice or apple cider (or maple syrup, sweetened water, pineapple juice, white grape juice, etc.)
Directions
Heat oven to 350º. In a large mixing bowl, stir together the first 11 ingredients. Combine the coconut oil, honey, agave, and apple juice in measuring cup; microwave at 30 second intervals to melt the coconut oil. Stir to combine.
Pour the liquid mixture over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Spread onto a large sheet pan lined with parchment. Bake until the mixture turns a nice, even golden brown, around 25-35 minutes, depending on oven.
Remove granola from the oven and allow to cool completely. Break up into crumbles or cut into bars as desired. Store in an airtight container.
Serving Size: Makes a lot - I estimated about 30 servings
