An easy lentil soup. An easy lentil soup.
Number of Servings: 4

Ingredients

    1 tsp. olive oil
    1 cup chopped onions
    1 cup chopped carrots
    2 cups low sodium, fat free chicken stock
    1 cup lentils
    1/4 tsp. black pepper
    1/4 tsp. thyme
    2 cups water
    1 tbsp. lemon juice

Directions

Saute onions and carrots in oil until soft.
Add all other ingredients except lemon juice.
Bring to a boil, then lower heat and simmer for 30 min.
Add lemon juice before serving.

Serving Size: Makes 4 Servings
