Introduction

Yummy! Nutrient dense and loads of vegetarian protein! Yummy! Nutrient dense and loads of vegetarian protein!
Number of Servings: 4

Ingredients

    1 can organic no salt added diced tomatoes
    1 can organic no salt added chickpeas
    1 jar of Seeds of Change Organic Jalfrezi curry sauce
    1/2 cup frozen peas
    1 pkg of mediterranean blend frozen vegetables (Whole Foods brand)
    7 large portobello mushroom caps, diced

Directions

Dice mushrooms and sautee until tender. Add canned tomatoes and rinsed chickpeas and stir. Allow to heat through. Next, add jalfrezi sauce and turn on simmer. Steam in separate pot (I use a steamer pot) the frozen peas and the mediterranean blend. Then add to the sauce mixture. Stir well. Allow to simmer until quinoa is done. Prepare quinoa (I prepare the same as I do rice).
