I have been searching for a recipe so that I could make Bourbon Chicken at home...like I get at the mall. It's my favorite. I could not find one that was just right so I decided to try to put some things together and make it myself. I think this recipe is right on the money! (And extremely low cal). I'm so happy! Ingredients

    1 cup of Diet Cola
    1/4 cup Sugar Free Maple Syrup
    1 Tbsp Teriyaki Marinade & Sauce
    1 Tbsp Bourbon
    6 oz Thigh meat cut into 1-inch cubes

Tips

I used all low-cal ingredients for this and am very pleased with the taste and calorie-count on the recipe. Enjoy!


Directions

Prepare the meat...cutting into cubes and removing the fat. Put all ingredients in a non-stick skillet and bring to a light boil over medium-high heat, stirring occasionally. Lower heat to a medium heat setting to simmer. Stir occasionally for about 8 minutes...until chicken is coated and cooked through. Serve over rice or stir-fry vegetables for a complete meal. The remaining sauce is a nice stir-in for rice or vegetables.
