Ingredients

1-2 tbsp water or low-sodium broth
1/2 cup diced onion or green garlic or leeks
Garlic, 3 clove (remove)
1/4 cup diced celery
2 tablespoons minced fresh herbs (basil or parsley)
1/4 teaspoon dried sage
1 teaspoon dried basil
1 teaspoon dried oregano
1.5 cups cooked lentils (about 0.75 cup dry) (remove)
1/4 cup cooked rice, ideally brown
*100% Natural Tomato Paste, 3 tbsp (remove)
2 tablespoons vital wheat gluten flour (remove)
2 tablespoons nutritional yeast
2 tablespoons no salt seasoning like Mrs Dash or Dr. Fuhrman's MatoZest
Ground black pepper to taste
Directions
Preheat oven to 350. In saute pan, heat 1 tablespoon water or broth, and saute the onion and garlic for 5 mins. Add the celery and fresh and dried herbs. Saute for another 5 mins, adding more water as needed to prevent sticking.
In a large bowl, combine the sauteed vegetables with all remaining ingredients and mix well. Mash lightly with a potato masher. With wet hands, form 2 tablespoons of the mixture into a smooth ball. Repeat for each. Place balls on very lightly oiled baking sheet and bake for 30 mins. Serve with low or no salt marinara sauce.
Serving Size: Makes 18 balls (3 servings at 6 balls each)
