Number of Servings: 24

Ingredients

    1 3/4 cup all-purpose flour
    2/3 cup white sugar
    2/3 cup splenda
    3/4 cup unsweetened cocoa powder
    2 tsp baking soda
    1 tsp baking powder
    1 tsp salt
    2 eggs
    1 cup strong brewed coffee
    1 1/4 cups buttermilk (I made my own by using 1 cup and 3 tbsp of skim milk and adding 1.5 tbsp of white vinegar and letting it sit for 10 minutes, nutrition calculated using 1 1/4 cups skim milk)
    1/4 cup unsweetened applesauce
    1 tsp vanilla extract

Tips

You could also make this in two round cake pans or one large cake pan. Increase baking time to 30-40 minutes.


Directions

Preheat oven to 350 degrees
Combine dry ingredients, make a well in the center
Add wet ingredients and mix
The batter will be thin
Pour into muffin tins with liners or sprayed with nonstick cooking spray
Bake for 15-20 minutes for cupcakes
