Introduction

Number of Servings: 10

Ingredients

    1 c peeled zucchini, chopped
    1.5 c vidalia onion, chopped
    1.5 c bell pepper, chopped
    5 lg stalk celery, chopped
    1 c bean sprouts, washed
    1c snow peas, chopped
    2 lg cucumbers with peel, chopped
    5 lg carrots, chopped
    1 med head cauliflower, chopped
    1 sm head iceberg lettuce, pulled into semi-large pieces

Tips

add any vegetable or fruit, a bit of cheese, salsa, meat, etc. for nice variation
a few tsp of sesame seeds also add a nice crunch


Directions

Mix all ingredients but lettuce.
Layer about 1/2 cup of lettuce in a bowl and top with the mixed ingredients. Add your favorite dressing (low cal) and voila!
