Ingredients

2 c strawberries, cut into small chunks
1 small over-ripe banana cut into small chunks
1/3 c craisins
1/3 c walnuts chopped, may use other nuts if desired
3/4 c coconut milk, any brand
1 - 6 0z. lowfat banana yogurt or strawberry banana yogurt
1 c whole wheat or whole grain flour
1 c all purpose, unbleached flour
2 c oatmeal dry
splenda, 4 single serving packets
1/4 c packed brown sugar
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
Directions
Preheat Oven 375 degrees.
Mix flours, oatmeal, salt, baking powder, baking soda, splenda, and brown sugar in a large bowl. Mix in coconut milk.
In a medium size bowl, add strawberry chunks, banana chunks, craisins, and walnuts. Add this mixture to flour mixture.
Grease bottom and sides of 2 9 inch pie pans. Dust with flour
Pour scone batter equally into pans. Bake for 45 to 55 minutes. These are very moist.
Cut each pan of scones into 9 pie shaped wedges. If desired you can dust a very light layer of powdered sugar on top.
