Ingredients

    1 pkg hash browns (no fat added)
    1 8 oz. container light sour cream
    1/2 cup fat free milk
    2 T green olives
    6 T bacon bits
    1 cup low fat shredded cheddar cheese
    green onions, chopped (optional)

Tips

You can make this a vegan and/or dairy free recipe by substituting vegan sour cream, plain light soy or rice milk, and soy or vegan cheese. Leave out the bacon bits for a gluten free vegan recipe, or substitute Bacos for a vegan (but not GF) recipe.


Directions

Spray casserole dish with non stick cooking spray. Place hash browns in a large casserole dish (10x13). Add milk and sour cream. Stir. Top with olives, bacon bits, and cheese. Cover with foil. Bake 30 minutes at 350 degrees. Remove foil and bake an additional 5 minutes.

Serving Size: 8 large servings if served as the main course, 12 if a side
