Ingredients

1 lb bag whole wheat rotini springs (racconto)
1 lb ground turkey 93% lean
1 raw egg (optional)
6 cups broccoli chopped into small bite size pieces
1 med - large chopped onion - cut into large pieces
2T minced garlic fresh (or ready to use in glass jar)
6oz velveeta cheese spread cut in small cubes
2oz blue cheese crumbled
1T canola oil
salt, pepper, poultry seasoning
Directions
Saute' onions in oil until they become tender. Add broccoli stems chopped in bite size pieces, cook until tender and add florets cut in small bite size pieces. leave broccoli a little undercooked and finish cooking later.In another skillet brown ground turkey mixed with a raw egg. season with salt & pepper & poultry seasoning.
Combine with onion broccoli mixture and add cubes of velveeta to melt.
Add pasta to boiling water as directed with a little salt. cook only until barely al dente (about 5 minutes) or just shy of al dente. Reserve 1 cup pasta water.
Drain, mix 1/2 c of pasta water into chhesy meat & veggie mixture, toss in pasta. Add rest of pasta water only if needed.
Serving Size: makes8 1 1/2 - 2 cup servings
