    2 Vegetable Sausage Patties
    4 slices of pre-cooked bacon, chopped
    4 Red Potatoes, chopped
    0.5 c green peppers, chopped
    1 c. red pepper, chopped
    1 c. fresh spinach
    6 xlarge or large eggs
    1 c. Reduced-fat (2%) cheddar cheese
    Seasonings to taste (dried onion, garlic, salt, pepper, dried parsley)


I vary the seasonings each time, sometimes I add basil or orgeno.


Cook potatoes to tender in microwave. Saute sausage in a saute pan sprayed with cooking spray. Add bacon. Cook 1-2 minutes, add potatoes and peppers. Add seasonings. Cook to tender. Add fresh spinach. When it is wilted, add eggs cook until nearly done, add cheese. Serve when melted.
