Number of Servings: 18

Ingredients

    4 bananas, mashed
    2 eggs
    .25 cup canola oil
    2 cups pineapple tidbits with juice (all natural)
    5 packets splenda
    2 cups whole wheat pancake mix
    1 cup all purpose flour
    1 cup blueberries, frozen and unsweetened

Tips

Using paper liners for the muffin tin instead of spraying reduces the amount of overall fat used in the recipe.
You could probably skip the canola oil and maybe use an extra banana or apple sauce.
I have used different types of fruit in this recipe. Feel free to mix it up.... just keep the overall amount of liquid to dry ingredient the same. You want the mixture to be wet and lumpy.
Good use for Pancake mix.


Directions

Mash bananas with fork. Add next 4 ingredients and mix til well blended. Add pancake mix and flour, mix until everything is just moistened. Add blueberries and mix lightly. Do not overmix. Line muffin tin with muffin paper liners. Fill tin with mixture with one
