Ingredients

    package of smoked turkey sausage, sliced
    6 cups water
    1/2 cup sliced scallions including green tops
    1/2 cup green sweet pepper, chopped
    1 cup dry light red kidney beans, rinsed
    2 TBS extra virgin olive oil
    1/2 tsp salt or to taste
    1/2 tsp black pepper or to taste
    4 cups canned tomatoes no-salt added

Directions

Rinse dry beans and put in large pot(I use a dutch oven) cover with water, bring to a boil then lower to simmer and cook 1/2-2 hours or until beans are tender. About a half hour before beans are done, saute' sausage, onions and peppers in olive oil until sausages are browned and onions and peppers are tender, add canned tomatoes, salt and pepper to taste. Simmer about a half hour. Add to pot with kidney beans and heat until heated through.
