Introduction

These are a delicious alternative to those gritty protein bars and there is NO PROCESSED SUGAR. Two muffins is comparable to one protein bar. Carbs come from raisins, carrots and milk. You can freeze these and warm them in the microwave when you're ready to eat them. Makes a great breakfast food too. Yummy! Ingredients

    4 egg whites
    1 cup canned pumpkin
    2/3 cup dry powdered milk
    6 tbsp whole wheat flour
    6 scoops vanilla whey protein powder
    1 tsp baking soda
    8 packages (more or less) of splenda
    2 tsp cinnamon
    1 tsp Pumpkin Pie Spice
    3/4 cup grated carrots
    1/2 cup raisins

Directions

Beat eggs, then add pumpkin and carrots stirring until well blended. In separate bowl stir together dry ingredients including raisins. Slowly add the dry ingredients to the pumpkin mixture and mix well. Pour batter evenly into muffin tins lightly sprayed with vegatable spray. Bake at 350 degrees approx. 20 minutes. Makes 12 muffins. Nutritional information is based on one muffin, but two muffins is comparable to one protein bar.
