Ingredients

    6 whole chicken breasts, boneless and skinless
    20 oz can pineapple chunks in 100% juice (no sugar added), undrained
    7 oz can mandarin oranges in juice, undrained
    12 oz fresh mushrooms, quartered
    8 oz can water chestnuts, drained
    1 medium yellow or sweet onion, cut into large chunks
    1 medium green bell pepper, cut into large chunks
    1/4 cup corn starch
    1/4 cup brown sugar
    3-4 cups water
    2 teaspoons Asian seasoning (I used Pampered Chef)
    3 cups prepared brown rice

Directions

Place all ingredients EXCEPT chicken, seasoning, and rice in crock pot. Stir to combine well. Clean chicken breast and trim of all fat; cut into large chunks and place in crock pot. Sprinkle Asian seasoning on top; stir to combine. Add enough water to just about cover all ingredients. Cook on high for 3-4 hours.

Cook rice according to package directions and serve with chicken mixture.
