Ingredients

~ 3 medium size eggs
~ 1 cup chopped frozen spinach
~ 3 small banquet turkey sausage links
~ 1 oz brie cheese
~ 1 tsp herbes de provence
Tips
This recipe can also be delicious with kale, mushrooms, pork sausage, leeks, turnips, potatoes, or sweet potatoes. Experiment, and enjoy!
Directions
Take 1 shallow microwave safe bowl, and line the bottom with the 3 sausage links.
On top of the sausage links, place the 1 cup of frozen spinach. If you have fresh, chopped spinach, that would be even better. Spread it over the sausage, but leave a little hole in the middle- this will be for the eggs if you want them runny. Kale would be delicious here too!
Break three eggs into the center of the spinach. If you want your eggs runny, leave the yolks intact. If you are more of a scrambled type of person, break the yolks, and use a fork to mix the eggs in with the spinach.
Crumble some brie and place about an ounce over the top.
Sprinkle a teaspoon or so of herbes de provence on top of it all!
Place in the microwave on high for 2.5- 3.5 minutes depending on the strength of your microwave, the depth of your bowl, whether or not your spinach and sausage are frozen or fresh, and how runny you want your eggs.
Pair with a pear or a sour apple, and a cup of hazlenut coffee, a latte, or an earl grey tea.
