Ingredients

    1 lb 99% fat free ground turkey
    1 large egg
    1 1/4 cups instant brown rice (uncooked)
    seasons (choose what you like, onion, garlic, italian season)
    3 large green peppers
    .28 oz can of chunky crushed tomatoe
    14.5 ox can diced tomato

Directions

Clean green peppers, and cut into quarters.
Mix ground turkey, rice, egg, and seasons.
Pour about a 1/3rd of the chunky tomatoes into bottom of crock pot, and put a layer of green peppers on top of that. Form meat mixture into 6 meatballs and put on top of green peppers. Pour diced tomatoes on top of meatballs, then add the rest of the green peppers. Pour the rest of the sauce over the peppers. Put the lid on, turn on to high and cook until done! Approximately 4-6hrs

6 servings of 1/2 pepper and 1 meatball.
