Introduction

Number of Servings: 4

Ingredients

    1lb 99% fat free ground turkey breast
    1-1/2 c chopped onion
    1 jalapeņo, remove half of seeds and stems and chop
    1-15.5 oz can cannelini beans
    1- 10 oz can Rotel with lime juice and cilantro
    1 - c lower sodium chicken broth
    1 - tbl olive oil
    1 - tsp chili powder
    1 - tsp cumin
    1 - tsp salt

Directions

Spray a large stainless steel pan with cooking spray. Brown the turkey breast, remove and set aside when almost cooked through.

Add the olive oil to the pan and cook onions until tender. Add beans, rotel, jalapeņos and spices. Add in cooked turkey. Add chicken broth and bring to a simmer.

Serving Size: Makes 4 healthy servings (about 1.5 cups each)
