Directions
This is a slow cooker (crockpot) recipe:
put 1/3 cup of vegetable
and all other ingredients (except tortilla)
Also add any spices you like: pepper, jalapeno seasoning, taco seasoning these all taste great together
Put all these ingredients in a pot for 4 hours or until the chicken falls off of the bone.
Remove the chicken and place in a seperate bowl. Remove the bones and shred the chicken (or break into small bite-size pieces)
In the same bowl, use a slotted spoon to scoop out the beans, peppers, onions and stewed tomatos from your crock pot.
Leave the juice in the crock pot.
Take the chicken mixture and spoon it onto a hot toritlla!
Wrap it up!
Then you can add a little more of the chicken mixture on top (for presentation)
Then ladle a small amount of the juice (from the crockpot) onto your burrito.
This creates a "Wet Burrito!"
If you have extra calories to spare, try putting some mexican style cheese on top. You can pop the whole wet burrito into the microwave for 1 minute to melt the cheese.
Delish!
Makes at least 10 burritos if not more!
