Introduction
I found this recipe on http://www.noraisinsonmyparade.com/2010/11/baked-chicken-fingers.html and altered the seasonings to my own tastes. Be sure to use a wire rack over your cookie sheet to keep the panko from getting mushy. These baked chicken tenders turn out crisp and juicy - a great, healthy alternative to frying. Ingredients

1.5 lbs chicken tenders or breast that has been sliced into thin strips (approx 12 tenders)
1 beaten egg
1.5 cups of panko bread crumbs seasoned to taste with:
salt
pepper
basil and/or oregano
garlic powder
crushed red pepper flakes
or any other dried herb or spice you prefer
Tips
Season the panko with whatever herbs and spices you want to match the flavor you're going for. You could marinate the chicken ahead of time to add flavor and tenderness.
Directions
Preheat oven to 400 degrees. Line a cookie sheet with foil. Place a wire rack over the cookie sheet and spray with cooking spray.
Wash chicken and pat dry with paper towels. Season chicken with salt and pepper on both sides.
Set up assembly line of chicken, beaten egg, and seasoned panko. Dip chicken into egg and then coat both sides in the panko mixture. Place chicken on wire rack.
Bake for 10-13 minutes at 400 degrees then flip over and bake for another 10-13 minutes until tenders are fully cooked.
Serve with dipping sauce such as honey mustard, buffalo sauce, soy sauce, barbecue sauce, etc.
Serving Size: makes approx. 12 pieces 3-4 inches in length (four adult servings)
