Introduction

A buttercream frosting that tastes a bit like homemade vanilla ice cream (or so my 6 year old sister tells me!) A buttercream frosting that tastes a bit like homemade vanilla ice cream (or so my 6 year old sister tells me!)
Number of Servings: 24

Ingredients

    - Butter, salted, 1 cup (yes, salted- the tastes work for the sweet cakes!)
    - Powdered sugar, 1 pound or 4 cups.
    - Vanilla extract, 2 teaspoons
    - Coffeemate Creamer, French Vanilla, 3 tablespoons

Tips

The frosting is just salty! It might not taste perfect in the mixer, but on white cake or a rich cake, the salt cuts the sweet, and you don't need too much frosting. On a mini cupcake (64 per batter instead of 24 regular cupcakes), I put only 1/10 of a serving (4-5 grams) of frosting on and to me, that is perfect!

Directions

Soften the butter only a bit in a microwave, then, using a stand mixer and a batter paddle if you have one, cream the butter. Add in two cups of the powdered sugar by cup while continuing to cream. Add in 2 tablespoons of the creamer, and then add in the remaining powdered sugar. Taste-test. Add in the extract as needed to taste. For a whippier tasting frosting, add in the extra tablespoon or any type of creamer or heavy cream. Dye and frost!

Serving Size: Makes enough to cover cake from one mix pretty easily, especially in slow-mo. Each serving is 1/24 of the recipe- or about 45 grams per serving.
