Ingredients

    Ingredients:

    Grilled Chicken Breast, no skin, 2 breast, bone and skin removed
    Kraft Mayo Light Mayonnaise (Mayo), 16 tbsp
    *Tomatoes, red, ripe, raw, year round average, 0.75 large whole (3" dia)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    Avocados, Florida, 1 fruit without skin and seeds
    Colby Cheese, 4 oz
    Chia Seed Nutiva, 2 tbsp
    *Toufayan Bakeries Whole Wheat Pita, 4 serving

    Preparation:
    Shred Chicken Breast
    Add 1/2 cup of Light Mayo
    Add 2 tblspns Chia Seed
    Cut tomatoes, cheese, avocado into cubes
    Slice mushroom to desired consistency
    Mix tomatoes, cheese and mushroom into mixed chicken salad
    Add Avocado and fold into mixture

Tips

You can make this lower calorie by removing cheese and reducing mayo to a quarter cup. The Pita adds carbs and protein but my family also enjoys this with nothing but a fork!
