Ingredients

    Zucchini, 2 cups, shredded
    Spinach, frozen, 2 cups
    Extra Virgin Olive Oil, 6 tbsp (for browning)
    Bread crumbs, dry, grated, plain, 1 cup
    Chili powder, 3 tbsp
    Cumin seed, 3 tbsp
    Coriander seed, 2 tbsp
    Curry powder, 2 tbsp
    Ground tumeric, 2 tbsp
    Garlic powder, 1 tbsp

Directions

Mix all ingreadients except olive oil. Using a standard large table spoon, combine 2 spoon-fulls into paddies. Should make approximately 10 paddies. Brown in olive oil. If needed, finish in oven.

Makes 10 paddies; 1 serving = 1 paddie
