Introduction

Served on crisp slices of peeled (or not) cucumber, this is a great small meal if you like or an appetizer in even smaller servings. Served on crisp slices of peeled (or not) cucumber, this is a great small meal if you like or an appetizer in even smaller servings.

Ingredients

    1 lb lean ground grass-fed beef
    1 onion, chopped
    1/2 red bell pepper, chopped
    1 T minced garlic
    1/4 c sliced black olives
    1/4 c tomato paste
    2/3 cup sour cream
    Salt and pepper to taste
    3 large peeled (or not) cucumbers, sliced

Tips

Add a salad or a serving of veggies (eggplant?) on the side for a larger meal.


Directions

Brown the ground beef with the onions and peppers. Add garlic, tomato paste, sour cream, salt and pepper, and heat through. Puree with stick blender.
With a zip lock bag full of the mixture, cut a corner off the bag and pipe the mixture onto cucumber slices (or just spread on with a spreader or knife) and top with sliced black olives.

Serving Size: Serves 6 for a meal, 20 for appetizers
