Introduction

Ingredients

    3 tbsp liquid egg whites, beaten well
    1/2 tsp. vanilla extract (or almond extract)
    1 Tbs. unsweetened almond milk
    2 Tbs. cocoa powder
    2 Tbs. Erythritol
    1/2 tsp. baking powder
    1 tsp light olive oil

Tips

This is a lower calorie/fat version of my other recipe. Swapping out the whole egg for just whites and the heavy cream for unsweetened almond milk.


Directions

Beat egg well and then mix in all other ingredients.
Spray the inside of a large straight-sided coffee cup with Pam & pour in batter.
Microwave for 60-90 seconds.
The shorter amount of time will create a cake with a chocolate "sauce".

Immediately unmold the cake onto a plate, so it doesn't continue cooking in the hot mug. Let it cool, or enjoy it warm!
