Ingredients

    2 slices light whole-wheat bread
    3 tbsp to 1/4 c liquid egg white (or egg beaters)
    2 tbsp unsweetened vanilla soymilk
    2 packets stevia
    cinnamon to taste
    1/2 tsp vanilla (or vanilla butternut)
    2 tbsp chocolate PB2, mixed with water to form peanut butter
    1 tbsp homemade vegetarian marshmallow (I've posted the recipe), cut into pieces
    1 graham cracker rectangle (1/4 of a single sheet)

Directions

Beat together the egg substitute, almond, stevia, vanilla and cinnamon. Dip one slice of bread in mixture. Place in ramekin or small baking dish sprayed with nonstick cooking spray. Top with prepared PB2 and marshmallow pieces.
Dip the other slice of bread in egg mixture and place it on top. Pour remaining egg mixture over everything. Crumble graham cracker on top.
Bake at 375 for 20 minutes. Wait patiently if you can. Then………
Enjoy! Top with Walden Farms chocolate sauce if you wish ;)
