Introduction

Ingredients

2-14.5 oz cans chicken broth
2 celery ribs, chopped
1 med. hed cabbage, shredded (about 3 lb)
1 med. onion, chopped
1 carrot, chopped
1/4 cup margarine
3 Tbsp. flour
salt and pepper to taste
2 c. fully cooked ham, extra lean--ground or cubed
chopped fresh parsley
1 c. milk, nonfat
1 14.5 oz can evaporated milk, fat free
1/2 tsp. dried thyme
Directions
In a large soup kettle, or Dutch oven, combine broth, celery, cabbage, onion, and carrot. Bring to a boil. Reduce heat; cover and simmer for 15 to 20 minutes or until vegetables are tender.
In a medium saucepan, add flour, salt, and pepper to melted butter or margarine; stir to form a smooth paste. Combine evaporated milk and milk; gradually add to flour mixture, stirring constantly. Cook and stir until thickened. Continue cooking 1 minute longer. Slowly add to vegetables. Add ham and thyme and heat through. Garnish with parsley. Yield: 8 to 10--1 cup servings
