Introduction

Ingredients

    2 Sticks celery
    2 Large carrots
    Some finely shredded green cabbage
    1 Large leek
    1 Small turnip
    2 Large onions
    1 tbs Olive oil
    2tbs Pot Barley, well washed & soaked overnight
    1.5 pints (1 litre) Vegetable Stock
    Black pepper
    1 Bayleaf
    1tbs Parsley, chopped (fresh or dried)

Directions

Clean and chop the vegetables, using celery leaves as well as the stalks. Chop one onion and a little of the celery and leek very finely, and soften in a large pan. Add all the other ingredients. Bring to the boil, stirring well, and allow to simmer covered until all the vegetables are soft - about 45 minutes. Serve sprinkled with parsley.
