Ingredients

    1/2 chicken breast
    1/4 c. canned black beans
    2 c. shredded or torn romaine lettuce
    2 tbs. homemade salsa (lowers the sodium in this recipe)
    4-5 strips of yellow and red bell pepper
    1 slice tomato
    1 tsp. olive oil
    1 slice of onion
    1 tsp. of ground cumin
    1 tsp. of onion powder
    1 tsp. of chili powder

    5 homemade corn tortilla chips (optional)
    2 tbs. reduced fat ranch dressing (optional)

Tips

Calories are calculated without the addition of the tortilla chips and salad dressing.


Directions

Coat chicken breast strips in one teaspoon olive oil and spices. Grill chicken in grill pan until cooked through. Place salad ingredients in bowl and top with chicken strips, black beans (rinsed) and salsa. Serve with homemade corn tortilla chips (optional).
