Introduction

This is a family favorite during the warm spring and hot summer months. We make it at least once a month. Of course, the kids pick out the olives-but...what are ya gonna do? This is a family favorite during the warm spring and hot summer months. We make it at least once a month. Of course, the kids pick out the olives-but...what are ya gonna do?
Number of Servings: 16

Ingredients

    1-1 pound box of whole grain pasta, prepared as directed and rinsed well with cold water
    1 can of low-sodium diced tomatoes, drained
    1 can of sweet corn, drained
    1-2 cans of small black pearl olives, drained and sliced
    1 package of imitation crab meat, diced small or hand-shredded.
    1 loose cup of shredded mozzarella(not packed)
    2-3 stalks of celery, diced small
    2 cups of regular, light, or fat free Italian dressing. (Recipe shows calories for regular Italian-as I am sensitive to the light and fat-free versions)

Tips

Serve as a lunch or as a side at a picnic! Keep in fridge no more than 3 days.


Directions

Cook the pasta as usual. Rinse with cold water until cool. (I slice up everything as the pasta cooks.) Combine all ingredients. Serve immediately or refrigerate.
