Introduction

I found this recipe on the blog of someone following the Dukan diet (I would credit her if I could remember the website). This recipe adheres to the Dukan diet and uses oat bran in place of flour. These will win no prize for deliciousness, but do provide a nice baked treat for those of us on the Dukan diet! This recipe makes 6 muffins, which equates to roughly 1 tbsp of oat bran per muffin, so those on "Cruise" phase can should be able to have two muffins per day. Ingredients

    6 tbsp oat bran
    6 tbsp splenda (or to taste)
    1 tsp baking powder
    2 eggs
    6 tbsp plain non-fat yogurt
    spices and flavorings to taste (cinnamon, cocoa, etc)

Tips

For chocolatey muffins, I use 4-5 tsp of plain Hershey's cocoa. Cinnamon can be a yummy addition to cocoa!

For pumpkin spice muffins, I used 2 tbsp of pumpkin pie spice and a dash or two of cinnamon.

I believe this is a good base recipe that will support a variety of flavors, as long as your additions are Dukan-approved. This might also work for other low-carb diets, if you consider approximately 9 g of carbs per serving to be "low-carb."


Directions

Mix ingredients together and pour into 6 greased cups in a muffin tin. Bake 15-21 minutes at 350 degrees. Time will depend on oven strength. My Jurassic-era oven needs 21 minutes.

    Incredible!
    I modified the recipe to get a better textured larger muffin. Grind the 6 T. oat bran into a flour in my Magic Bullet. Replace one egg with 3 T. egg white. Flavor with MIO or sugar free Jello and eliminate the additional Splenda. - 3/2/13
