Ingredients

    In mixing bowl:
    1 pre-cooked rotisserie chicken, remove skin and fat and throw away, cut meat into small, bite-sized pieces.
    3-4 stalks of celery (raw) diced
    3-4 scallions (raw) diced
    2 cups red grapes, cut into halves
    1/2 cup of sliced almonds

    Mix together 1 cup 2% Oikos Greek Yogurt, 1.5 tablespoon curry powder, salt and pepper to taste.

    Add yogurt mix to chicken and veggies/fruit- mix until everything is coated.

    Serve cold up to 6-8 servings.

    Tip: If allowed to sit in the refrigerator for a day - the flavors combine even more. Delish!

Tips

After mixing all ingredients, let stand for 24 hours and flavors will meld together.


Directions

I used Oikos 2% Greek Yogurt so that the mix was a little creamier than with the non-fat Greek yogurt.
