Number of Servings: 6

Ingredients

    6 slices of deli ham
    1/2 cup onions (chopped)
    1 tsp olive oil
    10 spears of asparagus
    1-1/2 cups cheddar cheese

Directions

Spray 6 cup muffin tin with cooking spray
Saute onions in olive oil, slightly browning onions.
Cut up each slice of ham and lay in bottom of muffin pan
Cut up asparagus and divide equally among muffin cups
Divide onions among the 6 cups
Place 1/4 cup of cheese in ech muffin cup
Whisk the 6 eggs together and divide among the cups

Bake @ 375 for 25 minutes or until tops begin to brown

Serving Size: makes 6 jumbo muffin quiches
