Ingredients

    - Sweet Onion
    - Yellow/Orange pepper

Tips

I usually top with Feta Cheese and serve with a whole wheat pita or wrap or ciabatta bread. Makes a great next-day lunch too!


Directions

Pan steam/sautee peppers and onions until soft on LOW (~15min), add tomatoes (~5min), continue to sautee for a short period of time. Serve hot.
