Introduction

Ingredients

    1 Wholly Wholesome Organic Spelt 9" pie shell
    3 slices of MorningStar Veggie Breakfast Bacon strips
    7 cups chopped leeks (about 2-3 very large ones)
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 1/4 cup egg white substitute
    2/3 cup of fat free milk

Directions

Steam salmon fillets (or broil them) as package directs. Set aside to cool.

Heat a large saucepan to medium/high heat, add cooking spray and chopped leeks and allow to sautee for 20 minutes. Cover and stir occasionally. After 20 minutes, add flaked salmon fillets, 1/4 of salt and 1/8 teaspoon pepper. Stir gently. Remove from heat.

Pop MorningStar Veggie Bacon strips in microwave and cook according to package instructions. Set aside to cool. Crumble once cooled.

Arrange leek mixture in prepared crust.

Combine egg substitute, milk, 1/4 teaspoon salt, and 1/8 teaspoon pepper; stir well with a whisk. Pour the milk mixture into crust. Sprinkle bacon crumbles on top.

Bake at 425° for 25 minutes or until a knife inserted in the center comes out clean; let stand 10 minutes.
