This is a healthy, delicious, quick, and easy to make snack. Serve with cucumber slices, carrot sticks or crackers. I have a hard time keeping this in my fridge because my family loves it so much. Ingredients

    2 (19 oz.) cans garbanzo beans (chick peas), drained
    1/2 c. extra virgin olive oil
    1 large head of fresh garlic, cloves peeled
    1/2 c. tahini (puree of roasted sesame seeds)
    1 c. freshly squeezed lemon juice (juice of 3 lg. lemons)
    1 t. salt
    1/2 c. water


Tips

Store in refrigerator. Can also be served warm.


Directions

Blend all ingredients in food processor till smooth, adding water gradually last, for right consistency.
Serve as a dip with cucumber slices and carrot sticks in place of crackers for a healthy snack.
Makes 4 cups.
