Delicious alternative to a yummy craving for pizza or calzones. THis is a delightful yummy pocket lunch! and healthy to boot! You can stuff whatever veggies or meats you'd like into it. Ingredients

    2 large round pitas, cut in half
    1/2 onion, chopped
    half a can of Diced tomatoes with Italian seasoning
    1/2 cup fresh spinach, remove stems
    12-16 slices of pepperoni (or turkey pepperoni)
    1 cup of skim mozzerella cheese, shredded


Tips

You can add whatever veggies or meats you'd like. You can use gluten free pitas for Gluten Free. No meats for vegetarian versions. So it's pretty versatile! :) It's a very delicious recipe!


Directions

1. Preheat oven: 300?; chop up the onion; warm pita bread, wrapped in a papertowel for about 20 seconds. Slice the pita bread in half. Remove stems for spinach.
2. layer a little cheese inside the pita; layer pepperoni 3-4 slices as desired; sprinkle in some onion, and some spinach; spoon in tomatoes as desired with juice (not too much as it can still get soggy). Pack in the mozzeralla in each of the pockets
3. Bake in the oven for about 15-20 minutes. Cool a couple of minutes then enjoy! Becareful, insides will be hot!

Serving Size: 1/2 pita, with 1/4 ingredients.
