Introduction

Ingredients

    2 cups sliced celery
    2 cups thinly sliced carrots
    2 cups cherry tomatoes halved
    2 cups sliced cucumber
    1 medium onion thinly slice & seperated into rings

    Dressing:
    3/4 cups olive oil
    1/2 cup minced parsley
    3 Tbsp white wine or balsamic vinegar
    1 minced garlic clove
    1 tsp salt
    1 tsp groud mustard
    1/8 teaspoon black pepper

    Combine vegetables together. Whisk ingredients fo dressing & pour over vegetables. Toss to coat, cover and refrigerate for 2 hours.

Tips

Can also substitute zucchini for cucumbers - or if you're like me - just add on as you like
