Introduction

I love cream of mushroom soup, but not the fat and salt that goes with the canned variety. I made up my own and my husband loves it! You can add meat if you want, but it's not necessary. Ingredients

    1 cup, sliced Onions
    2 cloves minced Garlic
    1 tbsp. Olive Oil,
    1/2 cup diced Celery
    2 cups slices Mushrooms
    4 cup Chicken Broth
    3/4 cup reduced fat Sour Cream
    2 tsp Salt,
    2 tsp Salt Free Seasoning

Tips

If you like a thicker soup, add a can of white beans. When you puree the soup, it acts as a thickener without the calories of flour or corn starch.


Directions

In a large pan, heat the oil then add onions, garlic, celery, and mushrooms.
Cook until vegetables are cooked through (about 5 minutes).
Add chicken broth, cover and reduce heat to medium low. Cook for about 10 minutes.
Remove cover and add spices to taste. Add reduced fat sour cream and stir until cream is combined and soup is heated throughout.
Using a submersible blender, puree the soup. It will still have chunks of onion and mushrooms, but they only add to the flavor.
Serve hot. Sprinkle some chives on top.
