Ingredients

    1 c whole-wheat pastry flour
    3/4 c white flour
    2 t baking powder
    1/2 t salt
    1 T honey
    4 T butter
    1 1/2 c milk
    2 eggs

Tips

Kids love to help with this recipe.

Delicious with soy milk substituting for milk. You might also try upping the whole-wheat content. I have been gradually shifting from all-white-flour and this approximately half-and-half arrangement goes down just fine with my five-year-old! Onward to 100% whole wheat?


Directions

Heat waffle iron. While it's heating:

Separate eggs. Melt butter and honey together; add milk and egg yolks. Mix dry ingredients. Beat egg whites until stiff. You will have three bowls of ingredients. Pour the wet into the dry and stir just enough to combine, leaving the mixture pebbly. Add the egg whites and fold in gently, again just enough to combine.

Cook according to your waffle iron's instructions.

Serving Size: Makes six 5"x5" Belgian waffles
