Ingredients

    ½ tbsp olive oil
    3 leeks, chopped
    1 onion, chopped
    2 carrots, chopped
    2 ribs celery, chopped
    2 cloves garlic, minced
    2 cups vegetable broth
    1/2 lb green beans, roughly chopped
    3 cups plum tomatoes, chopped
    1 lb green cabbage, shredded
    3 cups cooked cannellini beans
    1 cup water
    Salt and pepper

Directions

In hot oil, cook leeks, onion, carrot, celery, and garlic.
Add broth. Simmer 10-15 mins.
Add green beans, tomatoes, and cabbage, stirring.
Add beans, water, salt and pepper.
Cover, simmer 40 minutes, and serve.

    Incredible!
    Fantastic soup! Added a little tobasco for kick. I needed to add about 2-3 more cups of water during simmering, each dissolved with a bouillon cube. Add some crusty french bread and you have a delicious, filling and nutritious meal! - 1/30/11
