Introduction

Ingredients

    4 cups fresh spinach
    1.5 cups shredded carrots
    2 small pears
    .5 cup walnut pieces
    1.5 tbsp evoo
    1.5 tbsp balsamic vinaigrette
    .25 cup crumbled feta, optional

Tips

You might like to add a pinch of sugar or Splenda to the vinagrette. If so, also add a tbsp. of water.


Directions

Mix olive oil and vinegar.
Chop pear into bite-size pieces, then add to oil and vinegar, along with walnuts.
Refrigerate until serving time.
In a salad bowl, mix spinach, carrots, and vinaigrette mixture.
Add feta, if you like.
