Ingredients

    2 Tbsp Olive oil
    1 small onion chopped
    2-3 cloves garlic minced
    1-2 tsp dried basil or fresh if available
    1 pinch of Italian seasoning
    1/4 tsp red pepper flakes
    Salt and pepper to taste
    2 Medium yellow summer squash sliced thick and quartered
    1 Zucchini squash sliced thick and quartered
    1 Pint grape tomatoes halved
    1 small can organic tomato sauce
    1 package Trader Joe's Sausage-less sausage cooked per package directions and sliced into 1/2 inch slices
    2-4oz Daiya shredded mozzarella cheese ( vegan cheese)

Tips

Serve over whole wheat pasta or side of your choice.


Directions

In large skillet, heat oil over medium high heat, add onion and cook for about 2 minutes. Add garlic and cook for 2-3 minutes or until onions are tender. Add the squash and zucchini, sprinkle with basil, red pepper, italian seasoning, salt and pepper. Cook for about 5 min. then add the tomatoes. Cooke for about 1 minute then add the sausage and tomato sauce. Continue to cook until vegetables are tender. Sprinkle with the Daiya cheese and cook for about 1 minute or until cheese melts.
