Ingredients

    1 bag (10 oz) Carba-Nada Egg Fettuccini
    1 lb skinless chicken thighs, cut into 1" cubes
    1 T. EVOO
    1.5 cups chicken broth
    .75 cups shredded gruyere or swiss cheese
    2 cups fresh mushrooms, sliced

Directions

In large non-stick skillet, saute chicken in olive oil until brown on all sides. Season w/ salt and pepper, to taste.

Cook pasta in boiling water for just 2 minutes. Pasta will continue to cook in the oven.

Place pasta in greased casserole dish. Top with chicken, then mushrooms. Pour broth over all then sprinkle with cheese.

Bake at 350-degrees for 30 minutes.
